CHOC CHICKPEA COOKIES

Makes 8 cookies

Ingredients

1 egg
1/4 cup maple syrup
1/4 cup melted coconut oil
1/2 tsp vanilla extract
1/4 cup raw cacao
1.5 cups chickpea flour
1/2 tsp cinnamon
1/2 tsp baking powder
4 chopped dates or choc chips

Instructions

Preheat oven to 180C

Mix together all wet ingredients, then stir in dry ingredients until well combined.

Add your chopped dates or choc chips and stir well.

Makes 8 cookies, (it’s a very sticky batter so don’t try to shape them, just scoop up the batter with a spoon and place it on a lined baking sheet on the oven tray).

Bake for 8-10 minutes.

Let them cool for 5 minutes before transferring to a cooling rack to cool for another 10 before demolishing
