STRAWBERRIES & CREAM GUMMIES

Makes 20+ gummies
15 minutes + 3 hour cool time

Ingredients

Strawberry Layer:
1.5 cups frozen strawberries
3/4 cup boiling water 3 TBS gelatin
120ml cold water

Coconut Layer:
270ml coconut milk
1tsp vanilla extract
1.5 TBS gelatin
3TBS cold water
1 TBS honey

Instructions

Coconut Layer: Add coconut milk and vanilla to a saucepan over a low heat, stir till combined. Whilst heating, add the gelatin and cold water to a small bowl and stir for 30 seconds until it blooms. Add the gelatin to the saucepan and stir until the gelatin has melted.

Let cool for a few minutes and stir in the honey. Fill your moulds of choice one-quarter of the way with the coconut mixture. Place in the fridge and set for 20 minutes.

Strawberry Layer: Blitz the strawberries with boiling water in a blender until smooth.

Heat the strawberry mixture over a low–medium heat, stirring often. Repeat the gelatin step above for the strawberry layer, but this time add 3 tablespoons of gelatin powder and 120 ml (4 fl oz) cold water. Stir for 30 seconds until it blooms. Add the gelatin to the strawberry pot, stirring until well combined and the gelatin has melted. Once the coconut layer has had 20 minutes to set, pour your strawberry mixture into the moulds over the coconut mixture.

Note: If you can’t wait 20 minutes between layers, just pour the strawberry mixture in as soon as it’s ready and you’ll get more of a marbled effect.

Place into the fridge for at least 3 hours to set and transfer to an airtight container.
