TRAIL BIKKIE

Ingredients

  • Flax Egg: 1 tbsp flax meal + 3 tbsp warm water

  • 1 cup rolled oats

  • 2 tbsp pumpkin seeds

  • 2 tbsp sunflower seeds

  • ¼ cup melted coconut oil

  • ¼ - ⅓ cup maple syrup (adjust sweetness to taste)

  • 1 tsp vanilla extract

  • 1 tbsp chia seeds

  • 2 tbsp goji berries, cranberries, raisins, or chopped dates

  • 2 tbsp desiccated coconut

  • 1 tsp baking powder

  • Pinch of salt

Method

  1. Preheat oven to 180°C (350°F).

  2. Prepare flax egg: Mix flax meal with warm water, stir, and let sit for 5 minutes.

  3. Blend dry ingredients: Pulse oats, sunflower seeds, and pumpkin seeds in a blender for a few seconds—just enough to break them up while keeping some texture.

  4. Combine: In a large bowl, mix all wet ingredients. Stir in dry ingredients until well combined.

  5. Shape & Bake: Scoop heaped tablespoons of batter onto a lined baking tray. Bake for 15-18 minutes, or until golden.

  6. Cool: Let cookies sit for 10 minutes before transferring to a cooling rack for another 5-10 minutes.
