Ingredients
Flax Egg: 1 tbsp flax meal + 3 tbsp warm water
1 cup rolled oats
2 tbsp pumpkin seeds
2 tbsp sunflower seeds
¼ cup melted coconut oil
¼ - ⅓ cup maple syrup (adjust sweetness to taste)
1 tsp vanilla extract
1 tbsp chia seeds
2 tbsp goji berries, cranberries, raisins, or chopped dates
2 tbsp desiccated coconut
1 tsp baking powder
Pinch of salt
Method
Preheat oven to 180°C (350°F).
Prepare flax egg: Mix flax meal with warm water, stir, and let sit for 5 minutes.
Blend dry ingredients: Pulse oats, sunflower seeds, and pumpkin seeds in a blender for a few seconds—just enough to break them up while keeping some texture.
Combine: In a large bowl, mix all wet ingredients. Stir in dry ingredients until well combined.
Shape & Bake: Scoop heaped tablespoons of batter onto a lined baking tray. Bake for 15-18 minutes, or until golden.
Cool: Let cookies sit for 10 minutes before transferring to a cooling rack for another 5-10 minutes.
