ONE-PAN BROTHY CHICKEN BAKE


Ingredients:

  • 1 tsp paprika

  • 1 tsp thyme

  • 1/2 tsp cumin

  • 2 tbsp garlic oil (or olive oil mixed with 1 minced garlic clove)

  • 1 cup jasmine rice

  • 2 cups boiling water with 2 tsp broth paste (or broth or stock of choice)

  • 1/2 head broccoli, chopped

  • 1/2 cup green beans, chopped

  • 3 chicken thighs & 3 chicken drumsticks, or 5-6 chicken thighs


METHOD:

Preheat the oven to 180 degrees.

In a large bowl, mix together your spices (paprika, cumin & thyme) with oil, then add your chicken, mix until it’s all coated. Set aside.

Pour your washed/soaked rice into your baking dish of choice, along with your hot broth.*

Our favourite hack when we don’t have broth on hand is mixing boiling water with some broth concentrate. We use the Gevity RX concentrate, mixing 2 tsp with 2 cups of boiling water and pour it over the rice.

Add your chopped greens next, broccoli and green beans are our favourites here but you can use whatever you have on hand.

Then add your chicken on top. Spray some olive oil over the dish and then cover with foil.

Add into the oven for 30 minutes, removing the dish and removing the foil. Give the rice and veg around the chicken a toss. Spray some more olive oil, then put it back into the oven without the foil. Bake for another 15-20 minutes until crispy and golden and always make sure your chicken is cooked through.

*We always like to start by soaking our rice for at least a couple of hours, ideally 8 hours if you are prepared and add some acid like lemon or apple cider vinegar to your rice.
